Cherry Sour

Doing some updates! Have done quite a few beers over the last few month going to add a few of the more interesting ones up here. First up a dark saison. 

I’m lucky enough to have a massive cherry tree in my garden and as we had a good summer i ended up with about 50kg of cherries so decided to brew up something with cherries in, this is what i settled on.

Cherry Sour Saison
Stats
Final Volume: 23 Litres
Original Gravity: 1.068
Final Gravity: 1.006
Alcohol Content: 7% ABV
Bitterness: 16 IBU
Colour: 20 SRM

Malts
Pilsner 2.000kg
Vienna 2.000g
Wheat 500g
Pale Chocolate 100g
Carafa special III 100g

Hops
Hallertaur Hersbrucker 30g 60 Min

Other
3kg of pitted cherries

Yeast
White Labs 565 Belgian saison + WLP650 Brett B + Sour dregs

Update
31/05/2013 Brewed
3/06/2013 Fermenting Nicely at 18c will let it come up to 20/21c
21/06/2013 Down to 1.014 added a tube of brett WLP650 and 3kg of pitted fresh cherries
1/07/2013 Add the dregs of two bottle of brodies sours I drank
8/11/2013 Still in the fermentor
